Ingredients

  • 1 tablespoon of olive oil

  • 1 onion, chopped

  • 1 green bell pepper, chopped

  • 2 cloves of garlic, minced

  • 250g of diced chicken breast

  • 200g of canned diced tomatoes

  • 150g of long-grain rice

  • 400ml of chicken broth

  • 1 tablespoon of Cajun seasoning

  • 1/2 teaspoon of black pepper

  • 100g of frozen peas

  • 100g of sliced green onions for garnish

    Kitchen Tools Needed:

    Instructions:

    • Heat olive oil in a large skillet over medium heat.
    • Add chopped onion and green bell pepper to the skillet, sautéing until softened, about 3-4 minutes.

    • Add canned diced tomatoes, rice, chicken broth, Cajun seasoning, and black pepper to the skillet, stirring to combine.
