Ingredients

  • 4 large eggs

  • 100g of spinach, chopped

  • 50g of bell pepper, diced

  • 50g of cherry tomatoes, halved

  • 30g of onion, diced

  • 30g of feta cheese, crumbled

  • Salt and pepper to taste

  • 1 tablespoon of olive oil

    Instructions For Making Vegetable Frittata:

    Instructions:

    • Preheat the oven to 180°C (350°F).
    • In a mixing bowl, whisk the eggs until well beaten. Season with salt and pepper.
    • In a frying pan, heat the olive oil over medium heat. Add the onion and bell pepper, and sauté until soft.
    • Add the chopped spinach and cherry tomatoes to the frying pan. Cook for another 2-3 minutes until the spinach wilts.
    • Pour the beaten eggs over the vegetables in the frying pan. Sprinkle the crumbled feta cheese on top.
    • Cook for about 2-3 minutes, until the edges begin to set.
    • Transfer the frying pan to the preheated oven and bake for 10-15 minutes, until the frittata is firm and cooked through.
    • Remove from the oven, let it cool slightly, and slice into wedges. Serve warm.
