Ingredients

  • 400g of cooked chicken breast, shredded

  • 200g of shredded cheese (cheddar or mozzarella)

  • 4 large tortillas

  • 1 medium onion, finely chopped

  • 1 bell pepper, diced

  • 2 tablespoons of olive oil

  • 1 teaspoon of ground cumin

  • 1 teaspoon of chili powder

  • Salt and pepper to taste

    • Don’t forget to avoid rinsing!

    Instructions For Making Cheesy Chicken Quesadillas:

    • Heat the olive oil in a skillet over medium heat.
    • Add the chopped onion and diced bell pepper to the skillet. Sauté until they are soft, about 5 minutes.
    • Stir in the shredded chicken, ground cumin, chili powder, salt, and pepper, and cook for an additional 3-4 minutes.
    • Lay one tortilla flat in another skillet and sprinkle half of the cheese on one half of the tortilla.
    • Spoon the chicken mixture over the cheese, then add the remaining cheese on top.
    • Fold the tortilla over to create a half-moon shape.
    • Cook for about 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
    • Repeat with the remaining tortillas and filling.
    • Cut each quesadilla into wedges and serve hot.
